This How it's made episode is from an Icelandic sushi making factory that yearly boil 100 ton of rice for their frozen sushi product.
In the video we follow the fish from the see into the factory were it's filled by machines and prepared for the sushi. The machines does the same thing that a Japanese sushi chef has to learn during 10 years to master.
Later in the factory much of the work is done by hand by some aid form machines. In one station the people slice fish bites in exact 10 gram pieces, this must be very tedious work that you quickly get tired of.
